Buffalo Chicken Meatballs

Ingredients
  • • 1 lb. ground chicken (95% - 99% lean)
  • • ½ cup gluten-free panko bread crumbs
  • • 2 tablespoons green onion, finely chopped
  • • 1 tablespoon garlic, minced
  • • ½ cup buffalo sauce
  • • ¼ teaspoon salt
  • • ¼ teaspoon pepper
  • • Optional: extra buffalo sauce and green onion for topping, Bolthouse ranch for dipping
Instructions
  1. Preheat oven to 375 degrees and spray baking sheet.
  2. In a medium size bowl, add 1 lb. ground chicken, ½ cup gluten-free panko bread crumbs, 2 tablespoons finely chopped green onion, 1 tablespoon minced garlic, ¼ cup buffalo sauce, ¼ teaspoon salt, ¼ teaspoon pepper.
  3. Using a spoon or hands, mix ingredients until combined.
  4. With a tablespoon cookie scoop, gather ingredients and with hands, roll into a ball.
  5. Place meatball on baking sheet and repeat until all ingredients are used.
  6. Place baking sheet in oven for 30 minutes.
  7. Take meatballs out of oven and drizzle another ¼ cup of buffalo sauce on top, more if desired.
