Preheat oven to 350 degrees and spray a 9 inch baking dish, set aside.
Microwave the 4 sweet potatoes or boil them until tender (about 10 - 15 minutes depending on size of potatoes).
Once potatoes are soft, scrape the insides into a bowl, discarding the skins
Add ½ cup applesauce, ¼ cup melted coconut oil, ½ cup almond milk, ¼ cup brown sugar, 2 tablespoons coconut sugar, 1 teaspoon pure vanilla extract, ½ teaspoon salt, ¼ teaspoon nutmeg and ¼ teaspoon cinnamon
Blend ingredients with hand mixer and then spoon sweet potato mash into baking dish, set aside.
In a smaller bowl, mix together ¼ cup melted coconut oil, ⅓ cup brown sugar, ⅓ cup almond flour, ¾ cup pecans, chopped and ¼ teaspoon salt.
Once combined, pour over the top of the sweet potato mixture and throw the dish into the oven for 30 - 35 minutes, until top is golden brown
Take dish out of oven and let cool for about 5 minutes. Enjoy!
