Skinny Snickerdoodles

Ingredients
  • • 1½ cup almond flour + 2 tablespoons coconut flour
  • • 1 teaspoon baking powder
  • • ½ teaspoon salt
  • • ½ teaspoon cinnamon
  • • ¼ cup unsweetened organic applesauce
  • • ¼ cup coconut sugar
  • • ¼ cup pure maple syrup
  • • 1 large egg
  • • ½ teaspoon vanilla

  • Cinnamon Sugar
  • • 3 tablespoons white sugar
  • • 2 teaspoons cinnamon
Instructions
  1. Preheat oven to 350 degrees and line baking sheet with parchment paper.
  2. In a large bowl, using a hand mixer, blend all the ingredients except for the cinnamon sugar. Mix until smooth.
  3. Place bowl in fridge for at least 30 minutes to help set the dough.
  4. Place 3 tablespoons of white sugar and 2 teaspoons of cinnamon in a small bowl. Set aside.
  5. Once dough has set, use a cookie scoop to roll dough into ~1 inch balls and then immediately roll into the cinnamon sugar mixture until cookie is well coated.
  6. Continue step 5 until all the dough is used.
  7. Place baking sheet in oven and bake for 10 - 12 minutes, watching closely not to burn the bottoms.
  8. Let cool for 5 minutes and enjoy!
