Chicken Salad on Apple Slices

Ingredients
  • • 1 5 oz chicken breast shredded or cut into 1 inch cubes
  • • 1 tablespoon olive oil mayo or plain greek yogurt
  • • 2 tablespoons silvered almonds
  • • ⅛ cup dried cranberries
  • • 6-10 grapes, sliced
  • • 1 tablespoon green onion
  • • 1/4 teaspoon salt
  • • 1/4 teaspoon pepper
  • • 1 honey crisp apple, sliced
Instructions
  1. In a medium bowl mix together 1 5 oz chicken breast shredded or cut into 1 inch cubes, 1 tablespoon olive oil mayo or plain greek yogurt, 2 tablespoons silvered almond, ⅛ cup dried cranberries, 6-10 sliced grapes, 1 tablespoon diced green onion,1/4 teaspoon salt and ¼ teaspoon pepper.
  2. Core an apple and cut apples slices horizontally about ¼ inch thick (should yield 5-6 slices).
  3. Place chicken salad on apple slices.
  4. Enjoy!
