In a medium bowl, add ¼ cup grated parmesan cheese, 2 tablespoon gluten free bread crumbs, ¼ teaspoon paprika, ½ teaspoon parsley, ½ teaspoon garlic powder, ¼ teaspoon salt and ¼ teaspoon pepper. Mix together with fork.
Place salmon in parmesan mixture, coating well.
Drizzle 2 tablespoons olive oil in cast iron skillet on stove and place coated pieces of salmon in skillet.
Brown each side of the salmon, about 5 minutes and then transfer to pan and place in oven.
Bake for 20 minutes. Enjoy!
