Protein-Packed Egg Casserole

Ingredients
  • • 6 eggs
  • • 1 cup liquid eggwhites
  • • ½ lb. ground turkey (93% lean)
  • • ½ tablespoon olive oil
  • • 4 oz baby bella mushrooms (crimini)
  • • ¼ avocado
  • • ½ white onion, diced
  • • 3 oz light feta cheese
  • • 1 cup spinach
  • • ½ cup cheddar cheese
  • • ¼ teaspoon salt
  • • ¼ teaspoon pepper
Instructions
  1. Preheat oven to 350 degrees and spay 1 inch deep baking dish.
  2. Heat ½ tablespoon olive oil on stove and ground ½ lb (93% lean) turkey.
  3. While turkey browns, whisk together 6 eggs and 1 cup liquid egg whites. Slice 4 oz baby bella mushrooms, ¼ avocado and dice ½ a white onion and toss in egg mixture.
  4. Pour in 3 oz light feta cheese, 1 cup spinach, ½ lb browned ground turkey and ¼ teaspoon salt and pepper. Stir until completely mixed.
  5. Place egg mixture in baking dish and put in oven for 45 minutes (or until done).
  6. Sprinkle on the cheddar cheese and place back in oven until cheese melts (about 5 minutes).
  7. Let cool and enjoy!
