Lightened-Up Strawberry Fluff

Ingredients
  • • ½ cup gluten free pretzels, crushed
  • • ⅓ cup chopped pecans
  • • ⅓ cup organic brown sugar
  • • ⅓ cup coconut oil, melted
  • • 1 8oz container of greek cream cheese
  • • ½ cup organic coconut sugar
  • • 1 teaspoon organic pure vanilla
  • • 3 cups light cool whip
  • • 2 cups strawberries, sliced
Instructions
  1. Preheat oven to 400 degrees and spray baking pan.
  2. In a large bowl, mix together ⅓ cup chopped pecans, ½ cup crushed pretzels, ⅓ cup melted coconut oil and ⅓ cup organic brown sugar.
  3. Spread pretzel pecan mixture evenly on pan and throw in oven for 5-7 minutes, until browned. Set aside and let cool.
  4. Beat together 1 8 oz container of greek cream cheese, ½ cup coconut sugar and 1 teaspoon of vanilla.
  5. Once blended, fold in 3 cups of light cool whip and stir until ingredients are completely mixed. Then slice 2 cups of strawberries.
  6. Set both aside in fridge until pretzel pecan mixture is cooled.
  7. Once cooled, toss everything together and enjoy!
