BLT Collard Wrap

Ingredients
  • • 2 collard wraps
  • • 2 chicken breast, skinless, boneless, shredded
  • • 6-8 slices of bacon/turkey bacon (more if desired)
  • • 1 tomato, sliced
  • • 1 avocado, sliced
  • • 2 tablespoons ranch/mayo/hummus

  • Optional: green onion
Instructions
  1. Preheat oven to 350 degrees and line baking sheet with bacon/turkey bacon.
  2. Once pre-heated, place bacon in oven and let cook for 20 - 25 minutes, based on desired crispiness.
  3. Prepare the chicken breast (shred if not already), slice 1 tomato and 1 avocado.
  4. Once bacon is cooked, assemble two collard wraps - each collard wrap has 1 shredded chicken breast, 3-4 slices of bacon, 2 slices of tomato, ¼ - ½ sliced avocado and 1 tablespoon of ranch/mayo/hummus.
