Almond Butter Chocolate Chip Cookie Skillet

Ingredients
  • • 1 large egg
  • • 2 tablespoons maple syrup
  • • 2 tablespoons coconut sugar
  • • ¼ cup coconut oil, melted
  • • 1/3 cup almond butter
  • • 1 tablespoon unsweetened almond milk
  • • 1 teaspoon pure vanilla extract
  • • 1 cup almond flour
  • • ½ teaspoon baking soda
  • • 1/4 teaspoon cinnamon
  • • ½ cup chocolate chips (dark or milk)
  • • ¼ teaspoon coarse sea salt
Instructions
  1. Preheat oven to 350 degrees and spray 8" cast iron skillet with spray
  2. In a large bowl, mix together wet ingredients - 1 large egg, 2 tablespoons maple syrup, 2 tablespoons coconut sugar, ¼ cup melted coconut oil, ⅓ cup almond butter, 1 tablespoon unsweetened almond milk, 1 teaspoon pure vanilla extract.
  3. Then stir in dry ingredients - 1 cup almond flour, ½ teaspoon baking soda, ¼ teaspoon cinnamon.
  4. Mix ingredients well and fold in ½ cup chocolate chips.
  5. Place cast iron skillet in oven for 20 minutes and then broil for an additional 3 minutes.
  6. Take out of oven, sprinkle with ¼ teaspoon coarse sea salt. Enjoy!
