Slice cauliflower lengthwise place on pan. Sprinkle 2 tablespoons seasoning salt over cauliflower and place in oven on high for 10 minutes.
While the cauliflower is roasting, brown 1 lb. ground turkey with 1 tablespoon olive oil. Once browned, add 1 teaspoon chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1 teaspoon garlic. Set aside.
Dice ¼ cup green onion, ¼ cup tomato, and ¼ cup jalapeno, and drain/rinse 1 can pinto beans.
Once cauliflower is roasted, add all the toppings and place pan back in oven to broil for 5 minutes. Add ¾ cup - 1 cup shredded cheddar cheese and let melt.
