Classic Chicken Salad

Ingredients
  • • 8 - 10 oz shredded cooked chicken (~2 chicken breasts)
  • • ¼ cup olive oil mayo
  • • ¼ cup plain greek yogurt
  • • ¼ cup green onions, diced
  • • 2 - 3 tablespoons dill, diced
  • • ½ cup red grapes, sliced
  • • 1/2 teaspoon salt
  • • 1/2 teaspoon pepper
Instructions
  1. Shred cooked chicken in food processor or with hand mixer and place in large bowl.
  2. Add ¼ cup olive oil mayo, ¼ cup plain greek yogurt, ¼ cup diced green onions, 2 - 3 tablespoons diced dill, ½ cup sliced red grapes, ½ teaspoon salt and ½ teaspoon pepper to shredded chicken.
  3. Stir until combined.
  4. Serve with crackers, on lettuce wraps, in a sandwich or eat it plan.
