Healthier Scotcheroos

Ingredients
  • • 1½ cup natural peanut butter
  • • ⅓ cup honey
  • • 2 tablespoons pure maple syrup
  • • 4 cups gluten free brown rice krispies
  • • 1 ½ cups dark or milk chocolate chips
  • • 1 tablespoon coconut oil
Instructions
  1. Grease a 9x9 pan with cooking spray or line with parchment paper.
  2. In a small pot combine 1½ cup natural peanut butter, ⅓ cup honey and 2 tablespoons pure maple syrup. Turn on low heat, stirring frequently until mixture is creamy and smooth.
  3. In a large bowl, place 4 cups gluten free brown rice krispies. Pour the peanut butter mixture on top and gently stir mixture until the cereal is completely coated.
  4. Transfer rice krispie mixture to the pan and using a spoon, parchment paper, or your hands, press mixture firmly into pan. Set aside.
  5. Place 1½ cups dark or milk chocolate chips and 1 tablespoon coconut oil in a microwave safe bowl. Heat in 30 second intervals, until the chocolate is melted. (Should take about 1:30)
  6. Pour melted chocolate on top of the rice krispies, and spread evenly with a spoon. Sprinkle sea salt on top and set aside or place in refrigerator to set for 1½ to 2 hours.
  7. Once set, take out of fridge and let thaw for at least 10 minutes before butting scotcheroos into squares. Enjoy!
Notes
Keep scotcheroos covered for up to 3 days.
