Skillet Apple Crisp

Ingredients
  • Filling
  • 4 cups apples (peeled and cut into 1 inch pieces) - about 5 small apples
  • 2 tablespoons coconut oil
  • 2 tablespoons pure maple syrup
  • 2 tablespoons brown sugar (organic if you have it)
  • ½ teaspoon cinnamon
  • Crisp
  • 3 tablespoons coconut oil
  • ½ cup almond flour (or gluten free flour)
  • ½ cup oatmeal
  • ¼ cup brown sugar
  • ¼ teaspoon pink himalayan salt
Instructions
  1. Preheat the oven at 375 degrees.
  2. Peel about 5 apples (~ 4 cups) and dice into 1 inch cubes. Place in cast iron skillet on top of stove. Add 2 tablespoons coconut oil, 2 tablespoons maple syrup, 2 tablespoons brown sugar, and ½ teaspoon cinnamon.
  3. Cooking the apple mixture on the stove for about 8 - 10 minutes or until they are soft, stirring occasionally.
  4. While the apples are cooking, mix together oatmeal crumble ingredients – 3 tablespoons coconut oil, ½ cup almond flour, ½ cup gluten free oatmeal, ¼ cup brown sugar and ¼ teaspoon pink Himalayan sea salt.
  5. Once apples filling is baked, add the oatmeal crumble on top, spreading evenly.
  6. Place the skillet in the oven and let bake for 17 - 20 minutes.
  7. *Broil it for the last couple minutes to make the top crispy, just make sure to watch and not let it burn.
