In a large bowl, combine all the salad ingredients together – 1 cup spinach, cubed ½ green apple, cubed ½ red apple, ¼ cup dried cranberries, ¼ cup chopped pecans and ¼ cup light feta. If meal prepping (split salad into two)
In a small bowl combine 2 tablespoons olive oil, 3 tablespoons apple cider vinegar and 3 teaspoons brown sugar. If meal prepping, split dressing into two individual small containers
Pour dressing over salad and mix together until salad is wet.
