Peanut Butter Blossoms

Ingredients
  • • 1 cup peanut butter
  • • ¾ cup coconut sugar
  • • 1 large egg
  • • 1 teaspoon vanilla extract
  • • 30 milk chocolate kisses > justin’s PB cups > Alter Eco dark chocolate (sea salt)
Instructions
  1. Preheat oven to 350 degrees and do NOT spray cooking oil on the cookie sheet.
  2. In large bowl, add 1 cup all-natural peanut butter, ¾ cup coconut sugar, 1 large egg and 1 teaspoon vanilla extract. Using a hand mixer, cream until it “doughs.
  3. Using cookie scoop or spoon, scoop out cookie dough and roll into 1” balls and place them about 2” apart on ungreased cookie sheet.
  4. Bake cookies for about 12 minutes, depending on size.
  5. While cookies bake, break eco dark chocolate bar into small 0.5" pieces (I break one section into 4 pieces).
  6. Once cookies are done, let them set up on the cookie sheet for a few minutes, then place chocolate on top of cookies and press down gently. Move to a cooling rack.
  7. Enjoy!
Notes
The cookies may not look completely done, but the bottoms are probably brown and once you take them out of the oven they will continue cooking on the sheet.
