Homemade Paleo Waffles

Ingredients
  • • 1 cup almond flour
  • • ¼ cup coconut flour
  • • 1 teaspoon baking powder
  • • ½ teaspoon baking soda
  • • pinch of salt
  • • 2 eggs beaten
  • • 1 teaspoon vanilla
  • • 2 tablespoon pure maple syrup
  • • 2 tablespoons coconut oil, melted
  • • ½ cup unsweetened vanilla almond milk
Instructions
  1. Plug in waffle maker and turn settings to hot.
  2. Mix the dry ingredients together – 1 cup almond flour, ¼ cup coconut flour, 1 teaspoon baking powder, ½ teaspoon baking soda and a pinch of salt.
  3. In a separate bowl, whip 2 eggs and then add 1 teaspoon pure vanilla extract, 2 tablespoons pure maple syrup, 2 tablespoons melted coconut oil and ½ cup unsweetened vanilla almond milk.
  4. Pour the wet ingredients in with the dry and with a hand mixer, combine the ingredients until the batter is smooth.
  5. Add cooking spray to the waffle iron and then using ⅓ cup, scoop the batter into the iron and let it cook for about 5 minutes or until the outside is golden brown.
  6. Repeat until all the batter is used (about 4 waffles, depending on what size you make them).
  7. Serve them with fruit, maple syrup and/or peanut butter and enjoy!
