Mason Jar Cobb Salad

Ingredients
  • • 1 ½ cup organic spring mix
  • • 4 cherry tomatoes, sliced
  • • 4 cucumbers, diced
  • • 3 tablespoons ranch dressing (bolthouse, tessemae's or primal kitchen)
  • • ⅛ an avocado, sliced
  • • 4 oz (~1 cup) grilled chicken breast, cut into 1" pieces
  • • 1 egg
  • • Optional: 1-2 strips bacon
  • x the number of jars you're making
Instructions
  1. Cook chicken using grill, oven or instant pot and bring pot of water to boil and cook egg(s). (optional: cook bacon on stove or in oven, if desired).
  2. While the chicken and eggs cook, start preparing the salad. Place 3 tablespoons ranch dressing in the mason jar.
  3. Next, slice the cherry tomatoes and dice the cucumber and add on top of ranch dressing. Then, pack in the spring mix.
  4. Once the egg(s) is cooked, place in a bowl with ice water to cool before peeling. (If you're not eating the salad until later in the week, don't peel the hard boiled egg until the day of).
  5. Add ⅛ an avocado to the top of the spring mix and secure the lid.
  6. Once chicken is cooked, cut into 1 inch pieces and place in baggie/container to add to the salad later.
  7. When ready to eat, dump contents of mason jar into a bowl, add egg and chicken and enjoy!
