Air Fryer Gluten Free Fish & Chips

Ingredients
  • • 1 ½ lb. alaska pollock fillets / alsakan cod
  • • 2 large eggs, lightly beaten
  • • 1 cup gf panko
  • • ⅓ cup tapioca flour or coconut flour
  • • ¼ teaspoon dried thyme
  • • 1 teaspoon garlic powder
  • • 1 teaspoon paprika
  • • 1 bag frozen sweet potato fries (or homemade)


  • Tartar sauce:
  • • ⅓ cup mayo/plain greek yogurt
  • • 1 teaspoon dill pickle relish
  • • 1 teaspoon spicy mustard
  • • 1 teaspoon fresh lemon juice
  • • ¼ teaspoon fresh/dried dill
Instructions
  1. Preheat the oven to 425 degrees and spread sweet potato fries (store bought or homemade) on a baking sheet and place in the oven for 30 minutes, flipping halfway.
  2. Next, prep the fish. Make sure the cod is thawed and pat dry with a paper towel. Using a sharp knife, cut the cod lengthwise to create strips (about ½ inch thick).
  3. Next, place ⅓ cup tapioca flour (or coconut flour) in one shallow bowl, beat 2 eggs in another, and add 1 cup gluten free panko with ¼ teaspoon thyme, 1 teaspoon garlic powder and 1 teaspoon paprika in the last.
  4. One at a time, place a strip of cod in the tapioca flour, covering thoroughly. Then dip in the egg mixture, letting excess egg run off before moving to the gluten free panko mixture. Once fish is completely covered, place in the air-fryer bin and repeat.
  5. Set your air-fryer to 375 degrees and let fry for 20 minutes.
  6. While the fish fries, prep the tartar sauce by mixing ⅓ cup mayo or plain greek yogurt, 2 teaspoon dill pickle relish, 1 teaspoon spicy mustard, 1 teaspoon fresh lemon juice, and ¼ teaspoon fresh/dried dill into a small bowl.
