  • • 2 tablespoons maple syrup
  • • 2 tablespoons coconut sugar
  • • ¼ cup coconut oil, melted
  • • ⅓ cup almond butter
  • • 1 tablespoon unsweetened almond milk
  • • 1 teaspoon pure vanilla extract
  • • 1 cup almond flour
  • • ¼ cup coconut flour
  • • ½ teaspoon baking soda
  • • ¼ teaspoon cinnamon
  • • ½ cup chocolate chips (dark or milk)
  • • ¼ teaspoon coarse sea salt
  • • 1 pint vanilla ice cream
Instructions
  1. Preheat oven to 350 degrees.
  2. Make the chocolate chip cookies by mixing 1 large egg, 2 tablespoons maple syrup, 2 tablespoons coconut sugar, ¼ cup melted coconut oil, ⅓ cup almond butter, 1 tablespoon unsweetened almond milk, and 1 teaspoon pure vanilla extract in a medium-sized bowl.
  3. Then add the dry ingredients – 1 cup almond flour, ¼ cup coconut flour, ½ teaspoon baking soda, and ¼ teaspoon cinnamon. Fold in ½ cup chocolate chips.
  4. Using a cookie scoop, form the cookies into a ball and place on a un-greased baking sheet. Bake for 10 minutes.
  5. Once the cookies are done, let cool (about 10 minutes) on cooling rack, and then place cookies back on the baking sheet or on a plate and put them in the freezer for 1 hour.
  6. Take the cookies and ice cream out of the freezer and using an ice cream scoop, spoon ~¼ cup ice cream onto the bottom of one cookie, using a spoon spread the ice cream out evenly and then add the other cookie on top. Repeat until all cookies are used. Place back in the freezer and let set up for another hour.
