Easy and healthy meals to start the school year off right!

Summer is coming to a close, which means busier schedules, running kids to practices and “unscheduled” trips to fast food restaurants. But no worries, I’m here to help ya out with a little meal prep plan to keep you on track – including breakfasts, lunches, snacks and dinners! The best part, there’s a grocery list organized by aisle. Let’s kick this school year off strong! 💪🏼

For starters, where did the summer go? I can’t believe we are already thinking about back-to-school.

Or in my case, Fall, since I don’t have kids. Either way, it’s time to buckle down and get back on track.

And the best way to do that is…meal prep! It’s THEE single most important thing to prevent those “oopsie” cheat meals. It also takes the guesswork and hassle out of figuring out what to make.

There’s nothing worse than coming home from a long day of work to stand in front of the fridge trying to figure out what’s for dinner.

Make Meal Prep Possible

Ya’ll know meal prep is my jam. 💯

Every Sunday, my husband, Nick, and I take an hour or so to whip up all our meals for the week, including breakfasts, lunches and snacks. ONE HOUR PEOPLE.

This meal plan is basically an exact replica of what we have on a weekly basis, so I know you can do it too!

(Granted there are only two of us, we don’t have kids, and I make Nick help, nevertheless I know you can do it!)

It’s not hard to involve children or a spouse. Simply make a list and tell them what to do. Trust me when I say anyone can scoop hummus into a container.

Remember, it doesn’t have to be perfect. Prep for what fits your schedule and make other meals on the fly.

Be sure to read serving sizes on all the recipes and adjust your grocery list according to the number of people you’ll be feeding. Good luck!

Monday:
B Hashbrown Egg Cups, blueberries
L: Chicken Salad, crackers, veggies, hummus, grapes
S: Banana, peanut butter
D: Baked and Breaded Chicken Tenders, salad, sweet potato fries

Tuesday
B: Blueberry Muffin Overnight Oats
L: The Ultimate Lettuce Wrap Sandwich, veggies, hummus, grapes
S: Protein Bar – your choice of: RXBAR, Perfect Bar, One Bar, Epic Bar, Larabar
D: Egg Roll Bowl

Wednesday
B: Hashbrown Egg Cups, blueberries
L: Chicken Salad, crackers, veggies, hummus, grapes
S: Blueberry Energy Balls
D: Pan-Seared Salmon in Roasted Red Pepper Sauce, roasted broccoli, brown rice

Thursday
B: Blueberry Muffin Overnight Oats
L: The Ultimate Lettuce Wrap Sandwich, veggies, hummus, grapes
S: Protein Bar – your choice of: RXBAR, Perfect Bar, One Bar, Epic Bar, Larabar
D: Slow Cooker BBQ Pulled Pork Sandwiches, grilled corn on the cobb, coleslaw

Friday
B: Hashbrown Egg Cups, blueberries
L: Avocado Egg Salad on bread, veggies, hummus, grapes
S: Blueberry Energy Balls
D: Leftovers – Slow Cooker BBQ Pulled Pork Sandwiches, grilled corn on the cobb, coleslaw
D: GF Chocolate Chip Cookies

Weekends are free reign or eat leftovers! If you’re feeling really ambitious, whip up some other afitcado favorites:

Don’t forget!! Read through the grocery list before going to the store, you likely have A LOT of these items already in your pantry and fridge.
