A healthier (and tasty) twist on the all-American nachos!

Cauliflower NachosChips are out and roasted cauliflower is in! This low carb, low cal meal is packed with protein and loaded with all your favorites.

It’s the perfect option for when you’re craving comfort food, but want to stay on track! Simple ingredients and simply delicious.

Hi friends! 🤗 I’m sharing one of my all time favorite recipes with you today! The inspo came from one of my favorite bloggers – Fit Foodie Finds – she rocks and her recipes do too! Like always I added my own twist and can’t wait for you all to try it!

If you’re anything like me you love nachos, but the pile of greasy chips often prevents you from choosing it while your out to eat or at home. Well gone are those days! All you need is 7 ingredients, some spices and one pan to roast up this fiery dish!

  • Cauliflower
  • Ground Turkey
  • Jalapeno
  • Green Onion
  • Tomato
  • Pinto Beans
  • Cheddar Cheese

Hit up the grocery store and grab these ingredients because things are about to get real in the kitchen!

I know what you’re thinking, there’s no way cauliflower tastes like chips, and… you’re right. But in my opinion they make a pretty darn good substitute. I definitely don’t pick the cauliflower up like I do a chip, but the toppings are the same (if not better) and the cauliflower is very filling.

One of the best parts about this recipe is that it only requires one pan (maybe two, if you have to cook your ground turkey). Talk about easy clean up!

You can add or substitute any of your favorite ingredients, like:

  • Black beans instead of pinto
  • Shredded chicken instead of ground turkey
  • Cilantro or red onion instead of green onion (or in addition to)

Do it up the way you like it! I always add plain greek yogurt, sriracha and avocado to top mine off! 🥑🍅🌮 I love the creaminess the greek yogurt and avocado give it.

Cauliflower Nachos
So here’s what you need to do.

Spray a pan and slice the cauliflower lengthwise, so there are larger pieces. Once the cauliflower is on the pan, spray the cauliflower and sprinkle on seasoning salt. You’ll broil the cauliflower on high for 10 minutes – feel free to slip halfway through, but not necessary (and watch closely so it doesn’t burn).

While the cauliflower is roasting, brown your ground turkey with olive oil and all the spices (chili powder, paprika, cumin and garlic), cut/dice your toppings – green onion, tomato, jalapeno and drain/rinse the pinto beans.

Once the cauliflower is roasted, add all the toppings and place the pan back in the oven to cook for 5 minutes. Lastly, you’ll add the shredded cheddar cheese and let it melt. 😋

Then you’re good to go, top it off with your favorites – avocado, sriracha, salsa, plain greek yogurt – and chow down!!

Ingredients
  • • 1 head cauliflower, large slices
  • • 2 tablespoons seasoning salt
  • • 1 lb. lean ground turkey
  • • 1 tablespoon olive oil
  • • 1 teaspoon chili powder
  • • 1 teaspoon paprika
  • • 1 teaspoon cumin
  • • 1 teaspoon garlic powder
  • • 1 tablespoon olive oil
  • • 1 can (15.5 oz) pino beans, drained and rinsed
  • • ¼ cup jalapeno
  • • ¼ cup tomato, diced
  • • ¼ cup green onion, diced
  • • ¾ - 1 cup shredded cheddar cheese

  • Toppings: plain greek yogurt, avocado, sriracha, salsa
Instructions
  1. Turn on broiler and spray pan, set aside.
  2. Slice cauliflower lengthwise place on pan. Sprinkle 2 tablespoons seasoning salt over cauliflower and place in oven on high for 10 minutes.
  3. While the cauliflower is roasting, brown 1 lb. ground turkey with 1 tablespoon olive oil. Once browned, add 1 teaspoon chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1 teaspoon garlic. Set aside.
  4. Dice ¼ cup green onion, ¼ cup tomato, and ¼ cup jalapeno, and drain/rinse 1 can pinto beans.
  5. Once cauliflower is roasted, add all the toppings and place pan back in oven to broil for 5 minutes. Add ¾ cup - 1 cup shredded cheddar cheese and let melt.
  6. Add your favorite toppings: avocado, sriracha, salsa, plain greek yogurt. Enjoy!
