Healthy Gluten Free Chocolate Chip Cookies

The classic chocolate chip cookie made with almond flour for a healthier and even more delicious dessert!

Chocolate-Chip-Cookie-7These gluten free chocolate chip cookies are easy peasy and down right delightful. They’re great for a week day pick-me-up or with an afternoon coffee, and better yet, you can enjoy them without any guilt because they are made without any oil or refined sugar!

Heat up the oven and grab a big glass of milk because you’re going to love these tasty treats! 🍪

Hey there homies! How’s it going?? I’m loaded up on these gluten free chocolate chip cookies, so I’m feeling pretty good! 🙂

I had to make two batches this weekend because the first didn’t turn out 🤷🏻‍♀️ (yes, I didn’t make my own recipe right 🙈) and I was bound and determined to shoot them this weekend, so cue the second batch!

Luckily #2 turned out just perfect!

And I can’t say I was too mad about having a extra cookies laying around the house 😏

When it comes to finding a good store-bought gluten free cookie, it’s tough. My top choices are Tate’s, Simple Mills and Glutino.

Though nothing mimics a warm, soft and gooey homemade chocolate chip cookie right out of the oven.

That’s why you’re going to love this recipe! Even my dad said, quote “shoot sis, if you could figure out how to keep these good on the shelf, you’d be a millionaire!”

And that’s coming from my dad who is the pickiest eater on the face of the earth. Also, Nick ate the entire first batch in two days, so I must’ve done something right! 👍🏼

Chocolate-Chip-Cookie-5Healthy Gluten Free Chocolate Chip Cookie Ingredients

So let’s talk about the ingredients! NO OIL, NO BUTTER, NO REFINED SUGAR. NO XANTHAN GUM. Just pure healthy goodness!

Here’s what you’ll need:

  • almond flour
  • coconut flour
  • baking soda
  • egg
  • vanilla greek yogurt
  • vanilla extract
  • brown sugar
  • coconut sugar
  • chocolate chips
  • pink Himalayan sea salt

I’m a big fan of Bob’s Red Mill Almond Flour, it’s super fine and not as grainy as some other brands. You can buy a big bag at Target, or if you’re local Hy-Vee (check out my grocery store price comparison list for the best deals!)

I also love Enjoy Life Chocolate Chips! They are made with wholesome ingredients and they’re dairy free! So that’s a win in my book.

You likely already have all these ingredients in your pantry, and if you don’t stock up, because you’re going to want to make these cookies on repeat!

Chocolate-Chip-Cookie-5Recipe Tips

There’s not too many steps to perfecting these healthy gluten free chocolate chip cookies.

Step 1: Mix all the dry ingredients (almond flour, coconut flour, baking soda) in large bowl and then add the wet ingredients and use a hand mixer to combine.

Step 2: Stir in the chocolate chip cookies. As Nick always says, the more the merrier 🙂

Step 3: Use a cookie scoop to spoon out the dough, and then roll them into balls and place them on the cookie sheet.

Step 4: Bake them for 10 – 12 minutes or until tops turn golden brown.

Step 5: Pour yourself a glass of milk, kick the feet up and enjoy the best gluten free chocolate chip cookie (or two!)

I already know these will be a regular occurrence at our house. I hope you enjoy them as much as I do!

Ingredients
  • • 1 cup almond flour
  • • ¼ cup coconut flour
  • • 1 teaspoon baking soda
  • • 1 egg
  • • ¼ cup vanilla Greek yogurt
  • • 1 tsp vanilla extract
  • • ¼ cup brown sugar
  • • ½ cup coconut sugar
  • • ⅓ - ½ cup chocolate chips
  • • Sprinkle of coarse pink Himalayan sea salt
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large bowl mix dry ingredients (1 cup almond flour, ¼ cup coconut flour, 1 teaspoon baking soda)
  3. Add wet ingredients (1 teaspoon baking soda, 1 egg, ¼ cup vanilla greek yogurt, 1 tsp vanilla extract, ¼ cup brown sugar, and ½ cup coconut sugar) to same bowl and use a hand mixer to combine.
  4. Stir in ⅓ cup - ½ cup chocolate chip.
  5. Use a cookie scoop to spoon out dough, and roll into balls and place on cookie sheet
  6. Bake cookies for 10 - 12 minutes or until tops turn golden brown. Enjoy!
