Slow Cooker BBQ Pulled Pork Sandwiches

A quick and easy dinner that makes for a scrumptious summertime meal.

This tender, perfectly-seasoned pulled pork sandwich will become your family’s summer staple. It’s BBQ goodness is made with wholesome, fresh ingredients, so these sammies have half the sugar and calories! Pop a pork roast in the crockpot during the day and come home to a delicious, easy and healthy dinner that’ll be ready in minutes!

Heyooo! Where has the time gone? How is it July. Like seriously!? That is nuts. June was a crazy month for me. Between work, the blog and family, there was always something going on.

July will be a big month too! Nick and I are headed to San Diego for a wedding and spending some extra time there to explore. Then when we get back I start a NEW job!! It’s going to be a whirl-wind, but I’m soooo excited (and nervous)!!

Needless to say, we’re going to need some easy and fast meals on hand. 😉

Que… the BEST EVER BBQ PULLED PORK SANDWICHES!!

You guys. I’m secretly freaking out about this recipe. It’s going to be everyone’s fav, I just know it! Husband approved √ Kid-approved √ … and most importantly mom approved √

Here’s what you’ll need.

Pulled Pork Sandwich Ingredients

  • Boneless Pork Shoulder Roast (If you can find a Pork Butt Roast, that’ll work too!)
  • Rub: salt, pepper, brown sugar, paprika, garlic powder, cayenne
  • Apple cider vinegar
  • Water
  • BBQ (Big fan of Tessemae’s!!)
  • Cabbage
  • Pineapple
  • GF buns (My favs are Udi’s and Schar!)

Let’s talk BBQ sauce for a minute. Sweet Baby Rays and other popular brands have 70 calories and 16g of sugar in 2 tablespoons! 😱

Tessamaes and Primal Kitchen, on the other hand, has only 30 calories and 4g of sugar in 2 tablespoons! They are both whole30 approved and don’t add unnecessary sugars. Oh and most importantly, they are made from ingredients you can pronounce! 🙌🏼

What is the best cut of meat for pulled pork sandwiches?

I use a Pork Shoulder. 3 – 4 lb’er. If you’re looking in the grocery store, it might also be called Boston Butt or Pork Butt Roast, same thing!

What sides should I serve?

Coming up with the main meal is the easy part. What not so easy is picking the sides. Luckily, I’m here to help you out. Here are my top 5 picks:

  • Protein-Packed Pasta Salad
  • Sweet Potato Fries
  • House Salad with Bolthouse Ranch Dressing
  • Baked Beans
  • Coleslaw

How to Make Pulled Pork in the Crock Pot?

You guys, it’s real simple. In the morning (or whenever really) combine all the season together into a bowl and place your pork shoulder in the crockpot. Using your hands sprinkle the homemade rub on all sides of the pork (don’t forget the two ends). Turn your crockpot on low for 6 – 8 hours or high for 3 – 4 hours.

When the pork is down cooking, use tongs to place the pork roast on a cutting board (heads up: it will likely fall apart during the transfer). Drain the excess juices from the crockpot. Then using two forks shred the pork – this part is easy, it should fall right off!

Once you have everything shredded, place the meat back into the crockpot and add your BBQ sauce. Stir it together and let sit for a few minutes while you get your sides and toppings ready.

We love putting cabbage and pineapple on our sandwiches, but add whatever your heart desires.

Note: there will be leftovers, like lots of leftovers. These Pulled Pork Sandwiches are a great meal to feed a family or have at a party! You can also use the leftovers for  meal prep or in next night’s tacos! Either way, you’re going to be digging this southern barbeque delight!

Ingredients
  • Dry Rub
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 2 tablespoons brown sugar
  • 2 tablespoons paprika
  • 1 tablespoons garlic powder
  • 1 teaspoon cayenne


  • 3 - 4 pound boneless pork shoulder roast (aka Boston Butt or Pork Butt roast)
  • ¼ cup apple cider vinegar
  • ½ cup water
  • 2 cups BBQ sauce
  • Extras: pineapple, cabbage, GF hamburger buns
Instructions
  1. Combine dry rub ingredients together in bowl and place your pork shoulder in crockpot.
  2. Using your hands, sprinkle the homemade rub on all sides of the pork (don’t forget the two ends).
  3. Turn crockpot on low for 6 - 8 hours or high for 3 - 4 hours.
  4. When pork is ready, use tongs to place pork roast on a cutting board and drain excess juices from crockpot.
  5. Then using two forks shred the pork (it should fall right apart)
  6. Place meat back into crockpot and add your 2 cups of Tessemae's or Primal Kitchen BBQ sauce. Stir and let sit for a few minutes while you get your sides and toppings ready.
  7. Assemble your sandwich with desired extras and enjoy!
